On Labor Day, the Culinary Union launched a campaign to organize 10,000 non-union restaurant workers (beginning with Eataly Las Vegas at Park MGM) and released a new website, UnionEats.org.
UnionEats.org features a guide of 366 unionized restaurants on the Las Vegas Strip and in Downtown Las Vegas. The guide includes union restaurants by casino, type of cuisine, and a helpful price-range for tourists and customers.
The first organizing campaign for a non-union restaurant featured on the website is Eataly Las Vegas at Park MGM, a MGM Resorts International casino resort on the Las Vegas Strip. The website will be updated with more restaurant organizing campaigns as they launch.
“While the restaurant industry is booming on the Las Vegas Strip, non-union restaurant workers are being left behind. No one should be forced to work 2-3 jobs to make ends meet to take care of themselves and their families. If restaurant workers have a 40-hour work week, they should be able to live the Las Vegas Dream, especially when restaurants rake in millions of dollars a year,” said Ted Pappageorge, Secretary-Treasurer for the Culinary Union. “There is deep inequality inside Eataly Las Vegas with half of the workers being union and the other half are not, and non-union workers are fed up with being second class! That’s why the Culinary Union is launching the campaign to organize 10,000 restaurant workers, starting with MGM Resorts International’s Eataly Las Vegas at Park MGM. Non-union workers have dedicated years of their life to ensure the success of Eataly Las Vegas, but the success of Eataly Las Vegas has not trickled down to workers. Some of the richest restaurants in the country are on the Las Vegas Strip - they bring in millions of dollars of revenue each year, but wages for non-union restaurant workers are lagging behind. It’s time to unionize the restaurant industry!”
Last week, a leadership committee of Eataly Las Vegas workers attended big table negotiations with the Culinary Union and MGM Resorts International where they introduced themselves and presented the company negotiators with a 6-foot petition signed by over 80 of their co-workers demanding that MGM Resorts respect their signatures and agree to a fair process for workers to decide whether to have union representation without management interference and intimidation.
“I’m fighting for a fair process so that my coworkers and I can decide whether to unionize without interference. There aren't enough workers to cover us during our breaks, so we have to take it whenever we can or at the end of our shift. We are humans, and we want to be treated as such. We aren’t robots that don’t need breaks or water. We deserve to be treated with dignity,” said Roselia Vaquerano, a cook at Eataly Las Vegas. “I’m a single mom. I live with my mother and my daughter (who also works at Eataly Las Vegas), but her income goes to pay for her education, so I’m taking care of the rest: Rent, groceries, and bills, and it is hard to make ends meet when your paycheck is not enough to cover everything. Winning a union would mean a huge victory for me and my coworkers. It would mean having better wages, health care, and benefits which would give us the opportunity to work with excitement and know that we would have a way to cover our bills.”
“I support Eataly Las Vegas workers in this fight because I know what it means to work without a union. I believe that one job should be enough and we deserve to spend more time with our families,” said Alicia Solorzano, a unionized porter steward at Eataly Las Vegas. “Culinary Union members throughout the city are fighting for the best contract ever with the highest wage increases, so we need to stay united. Having a union contract means having a better life for my family and my kids. I also want that for my co-workers. We all deserve to have a fair share of the success we’ve helped create. Eataly Las Vegas workers, stick together and you will win the right to organize!”

El Día del Trabajo, La Unión Culinaria lanzó una campaña para organizar a 10.000 trabajadores de restaurantes no sindicados (empezando por Eataly Las Vegas en Park MGM) y estrenó un nuevo sitio web, UnionEats.org.
UnionEats.org ofrece una guía de 366 restaurantes sindicalizados en el Strip de Las Vegas y en el centro de la ciudad. La guía incluye restaurantes de la unión por casino, tipo de cocina, y un rango de precios útil para turistas y clientes.
La primera campaña de organización de un restaurante sin unión que aparece en el sitio web es Eataly Las Vegas en Park MGM, un casino resort de MGM Resorts International en Las Vegas Strip. El sitio web se actualizará con más campañas de organización de restaurantes a medida que se vayan lanzando.

Los trabajadores sin unión han dedicado años de su vida a garantizar el éxito de Eataly Las Vegas, pero el éxito de Eataly Las Vegas no ha alcanzado a los trabajadores. En el Strip de Las Vegas se encuentran algunos de los restaurantes más ricos del país, que aportan millones de dólares de ingresos cada año, pero los salarios de los trabajadores de restaurantes sin unión se están quedando atrás. Es hora de unificar la industria de los restaurantes".
La semana pasada, un comité de liderazgo de trabajadores de Eataly Las Vegas asistió a una gran mesa de negociaciones con La Unión Culinaria y MGM Resorts International, donde se presentaron y entregaron a los negociadores de la empresa una petición de 2 metros firmada por más de 80 de sus compañeros de trabajo exigiendo que MGM Resorts respete sus firmas y acepte un proceso justo para que los trabajadores decidan si quieren tener representación de la unión sin la interferencia y la intimidación de la gerencia.
"Estoy luchando por un proceso justo para que mis compañeros y yo podamos decidir si nos unimos a la unión sin interferencias. No hay suficientes trabajadores para cubrirnos durante los descansos, así que tenemos que tomarlos cuando podemos o al final de nuestro turno. Somos humanos y queremos que se nos trate como tal. No somos robots que no necesitan descansos ni agua. Merecemos que se nos trate con dignidad", afirma Roselia Vaquerano, cocinera de Eataly Las Vegas. "Soy madre soltera. Vivo con mi madre y mi hija (que también trabaja en Eataly Las Vegas), pero sus ingresos son para pagar sus estudios, así que yo me encargo del resto: Renta, comida y facturas, y es difícil llegar a fin de mes cuando tu sueldo no alcanza para cubrirlo todo. Conseguir la unión significaría una gran victoria para mí y para mis compañeros. Significaría tener mejores salarios, seguro médico y beneficios que nos darían la oportunidad de trabajar con ilusión y saber que tendríamos una forma de cubrir nuestras facturas."
"Apoyo a los trabajadores de Eataly Las Vegas en esta lucha porque sé lo que significa trabajar sin unión. Creo que un trabajo debería ser suficiente y nos merecemos pasar más tiempo con nuestras familias", dijo Alicia Solorzano, una portera sindicalizada de Eataly Las Vegas. "Los miembros de La Unión Culinaria de toda la ciudad están luchando por el mejor contrato de la historia con los mayores aumentos salariales, así que tenemos que permanecer unidos. Tener un contrato de unión significa tener una vida mejor para mi familia y mis hijos. También lo quiero para mis compañeros. Todos merecemos una parte justa del éxito que hemos contribuido a crear. Trabajadores de Eataly Las Vegas, permanezcan unidos y ganarán el derecho a organizarse".
